Chili of the Ranch

This McLaughlin beef chili recipe was shared with us by Gina G.

Chili of the Ranch

Ingredients

  • 2 pounds McLaughlin beef stew meat
  • Red bell pepper
  • Yellow bell pepper
  • Orange bell pepper
  • 2 jalapeƱo peppers seeded
  • Onion
  • 2 cups beef broth
  • Water as needed
  • Tomato paste
  • 3 cans diced tomatoes
  • 3 cans red beans
  • Taco seasoning
  • 1/8 teaspoon chipotle
  • Corn

Instructions

  1. Place beef in the slow cooker with broth and cook on high for four hours
  2. Cut the bell peppers jalapeños and onion
  3. Drain and rinse the beans
  4. Place the beef with juice and broth, vegetables, and beans in stove pot
  5. Add in the diced tomatoes and tomato paste
  6. Season with taco seasoning and chipotle 
  7. Place corn in the pot
  8. Serve
