Skillet Bow Tie Lasagna

This quick recipe tastes just like lasagna, but you make it on the stove. It’s very tasty and is always a hit with my family.

Yield: serves 4-6

Skillet Bow Tie Lasagna

Ingredients

  • 1 lb. ground beef
  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 14-1/2 oz. can diced tomatoes
  • 1-1/2 cups water
  • 6-oz. can tomato paste
  • 3 Tablespoons Italian seasoning
  • 1 teaspoon salt
  • 2-1/2 cups bowtie pasta, uncooked
  • 3/4 cup small-curd cottage cheese
  • 1/4 cup grated Parmesan cheese

Instructions

Brown ground beef with onion and garlic in a large cast-iron skillet over medium heat; drain. 

Add tomatoes with juice, water, tomato paste and seasonings; mix well. 

Stir in uncooked pasta; bring to a boil. Reduce heat to medium-low; cover and simmer for 20 to 25 minutes, until pasta is tender, stirring occasionally. 

Combine cheeses in a bowl; drop by rounded tablespoonfuls onto pasta mixture. Cover and simmer for 5 minutes.
