All-American Chili

Ingredients

  • 8 oz. Highland Hot Italian Sausage
  • 3/4 cup Merlot or other fruity red wine
  • 8 oz. Highland Sweet Italian Sausage
  • 3/4/cup beef broth
  • 1 lb. Highland Ground Beef
  • 2 (28oz) cans of Fire Roasted Diced tomatoes
  • 2 cups sweet onion, chopped
  • 2 (15oz) cans chili beans
  • 1 cup red pepper, chopped
  • 8 garlic cloves, minced
  • 1 cup shredded cheddar cheese
  • 1 jalapeño pepper, chopped
  • 1 cup sour cream
  • 4 green onions, sliced
  • 1½ Tablespoon chili powder
  • ⅛ teaspoon Ancho Chile pepper
  • 1 ½ teaspoon smoked paprika
  • 1 ½ teaspoon ground cumin
  • 3 Tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 2 teaspoon salt
  • 1 teaspoon pepper
  • 2 bay leaves

Instructions

  1. Heat a large Dutch oven over medium-high heat. Add sausage, after removing casings and add ground beef, cook 5 minutes.  Add onion, red pepper, garlic and jalapeño to pan; cook 5 minutes or until sausage and beef are browned, stirring to crumble.
  2. Add chili powder, Ancho Chile pepper, smoked paprika, ground cumin, tomato paste, oregano, salt, pepper and bay leaves, and cook for 1 minute, stirring constantly. Stir in wine, beef broth, tomatoes, and chili beans; bring to a boil. Cover, reduce heat, and simmer 1 hour, stirring occasionally.
  3. Uncover and cook for 30 minutes, stirring occasionally. Discard the bay leaves. Sprinkle each serving with cheddar cheese. Serve with sour cream and green onions.  The chili is even better the next day.
